Smoked salmon and broccoli quiche

One of my personal favourites, really easy to make and tastes delicious. The picture is one I made however I used salmon fillets rather than smoked salmon. Add some salad and make a meal out of it or it’s perfect as a snack.

Ingredients

  • Low-calorie cooking spray
  • 1 medium head of broccoli, cut into small florets
  • 2 spring onions, trimmed & finely chopped
  • 8 large eggs
  • 2 tbsp Quark (unflavoured)
  • Salt & ground black pepper
  • 4-6 slices of smoked salmon, cut into small pieces

Method

Preheat oven to 200 oC (fan 180 oC/gas mark 6).

Steam or boil the broccoli florets for 3-4 minutes , then drain & pat dry with a paper towel. Set aside to cool.

Spray a frying pan with the cooking spray & place over a medium heat, add the spring onions & fry for 2-3 minutes until softened.

Beat the eggs with the quark adding a pinch of salt & pepper in a medium bowl until smooth with no lumps.

Arrange the broccoli, smoked salmon & spring onions in a 20cm (8”) round silicon mould or flan dish, then pour over the egg mix.

Bake in the oven for 20-25 minutes or until set & golden on the top.

Remove from the oven & serve hot or cold.
